This is one of our favorite quick go-to meals. I can have this on the table in about 15 minutes. I’ll usually make this for dinner with a microwaved potato or toast, and fruit. Leftovers will make an appearance the next day for lunch. I like to warm up a couple of corn tortillas, and spoon the scramble inside. Also good with tofu sour cream and hot sauce.
I tried many Tofu Scramble recipes over the years. Most of the time, I didn’t care for the spice combos. So, I invented my own that my family likes. 🙂
I batch cook at least 2 (sometimes 3) blocks of tofu at once so we can have lots of leftovers later. I’ve experimented with using different firmness of tofu, and like using part medium or soft with part firm or extra firm.
It costs me less than $.50 per person for a Tofu Scramble meal that includes a potato and fruit.
Ingredients:
1 block firm or extra firm tofu (14-16 oz.)
1 block soft or medium tofu (14-16 oz.)
1 TB brown mustard (credit to Happy Herbivore for this idea)
1 tsp. granulated garlic
2 tsp. granulated onion
1/4 tsp. turmeric
1 pinch dry rubbed sage
1 tsp. salt
1 TB vegan Chick’n bouillon ( I buy this from the bulk bin at my local Natural Food Store. Omit if 100% oil-free) Could also use a bit of liquid veggie broth.
2 TB nutritional yeast
few grinds fresh pepper
1 tsp. salt
Optional: Fresh herbs, mushrooms, onions, garlic, other veggies or greens are all good, would add to prep time.
Directions:
Heat up large pan. I use a flat skillet. Crumble tofu into pan. (I use my hands.) Add all the other ingredients and use a spatula to gently but thoroughly incorporate. Taste after a couple of minutes, and add more spices and salt if desired. Cook until it is done to your liking, turning a few times and adding broth if needed to prevent sticking. I usually cook about 10 minutes, putting the potatoes (if eating) in the microwave as it starts to cook. Enjoy!
My daughter also likes this with melted Daiya on top. It is also really good with avocado and fresh tomatoes on top.
Breakdown of cost:
I last made this with tofu I got on sale at Grocery Outlet for $.39, which cost less than $.50 per person for this meal!. I am able to buy tofu anytime for $1-$1.20 a package. The $.50 per person price is based on that.
