When my daughter was in Kindergarten, her (vegetarian! <3) teacher gave me this Vegan Lunch Box Cookbook when she was done with it. I LOVED it! I have a passion for cookbooks, and like to get inspiration even if I ‘m not following a recipe to the letter.
I really love that there are a TON of colorful photos. It’s fun to just “read” this cookbook. The recipes are quite straight forward, even if they do look impressive.
This author starting posting her son’s lunch every day, which led to the creation of this book.
But wait, there’s another book! She then published this one, which really speaks to the Anthropology major in me. These two books together should have you covered for every lunch your kids (or you!) take to school, outings, or even work.
