It’s a few weeks before Thanksgiving, and I’m starting to take stock of what I already have in my pantry and freezer for Thanksgiving dinner. I’ll make a list of the things I still need to buy; usually I will just need tofu, stuffing mix, sparkling cider and some produce. Since I make basically the same dinner every year, it’s fairly easy to plan and shop. We have a small gathering for Thanksgiving, but this menu could easily accomodate a larger gathering by doubling the sides. The tofu turkey makes A LOT! And it’s delicious! I estimate It could feed up to 20. I have brought it to gatherings with non vegans, and everybody liked it!

We’ll likely have a really good deal at Target coming up for many Thanksgiving food items. Last year, we had a $10 gift card deal when we spent $50. Last year, sparkling cider was $1 at Grocery Outlet. If that’s not the case this year, I know other places will have it for $2. I buy my tofu at 99 Ranch for $1-$1.50/pack. The pumpkin for my pies is in my freezer from pumpkin I roasted and pureed last year. Happy Thanksgiving everyone, or as we say at my house, Happy Tofu Turkey Day! 🙂
